Apple Cinnamon Walnut Muffins

Muffin batter prepared from baking mix, bran cereal, brown sugar and walnuts. Batter spooned into muffin cups, topped with crumb mixture and baked in hot oven.

Ingredients -
1-1/2 cups All-Purpose Baking Mix
2-1/4 cups Bran Flakes, divided
1/4 cup plus 2 tablespoons firmly packed Brown Sugar, divided
3/4 cup chopped Walnuts, divided
1/2 cup Cinnamon-Flavored Applesauce
3/4 cup Fat-Free Milk
1 Egg, lightly beaten
 
Preparation:

1. Preheat oven to 400° F.

2. Combine baking mix, 2 cups of the cereal, 1/4 cup of the brown sugar and 1/2 cup of the walnuts in large bowl.

3. Add applesauce, milk and egg.

4. Stir just until dry ingredients are moistened.

5. Spoon the muffin batter evenly into paper-lined medium muffin pan, filling each cup 3/4 full.

6. Combine remaining 1/4 cup cereal, 1/4 cup walnuts and 2 Tbsp. brown sugar.

7. Sprinkle over batter.

8. Bake 18 to 20 min. or until wooden pick inserted in centers comes out clean.

9. Serve warm or cooled.

Grease the bottom of muffin cups and fill only halfway up the sides for nicely rounded muffin tops.

Once the batter has been prepared, the baking agents such as baking powder or baking soda have been activated, so distribute batter into individual muffin cups and get the tin in a preheated oven as soon as possible.
