Apple Crisp Muffins

Batter prepared from milk, vegetable oil, egg, apples, flour, sugar, baking powder, salt and cinnamon. Mixture is spooned into muffin cups and topped with crisp mixture created from brown sugar, flour, oats, margarine, and cinnamon. Muffins are baked in hot oven until firm to the touch.

Ingredients -
3/4 cup Milk
1/2 cup Vegetable Oil
1 Egg
2 cups Flour
1/3 cup Sugar
3 teaspoons Salt
1 medium Apple, pared and chopped
1/2 teaspoon Cinnamon

Crisp:
2/3 cup Brown Sugar
1/2 cup Flour
1/2 cup Oats
1/3 cup Margarine
3/4 teaspoon Cinnamon
 
Preparation:

1. Preheat oven to 400 F.

2. Grease muffin pan.

3. Beat milk, oil and egg in mixing bowl. Fold in apples.

4. Stir in flour, sugar, baking powder, salt and cinnamon, all at once, until flour is moistened.

5. Spoon batter evenly into muffin cups.

6. Mix the crisp ingredients together and generously top each muffin with the crisp mixture.

7. Bake about 18-20 minutes.

Fill muffin cups only 3/4 full to produce muffins with high, rounded crowns. Never over fill muffin cups.

Muffin Pan Preparation

Pans should be lined with cupcake liners or sprayed or coated with vegetable oil or butter well in advance of batter preparation. Have toppings such as nuts, granola or grated chocolate assembled ready to use before making the muffin batter. Once the wet and dry ingredients are combined, distribute batter quickly into the prepared muffin tin and place in the oven as quickly as possible as the baking agents in baking powder and baking soda have been activated as soon as the batter is prepared.
