Apple Raisin Nut Muffins

Muffin batter created from white sugar, vegetable oil, eggs, vanilla extract, raisins, ready-made apple pie filling, finely chopped walnuts, all-purpose flour, baking soda, baking powder, cinnamon, and salt. Mixture is spooned into muffin cups and topped with mixture of sugar, brown sugar, butter and flour before being baked.

Ingredients -
1 cup Sugar
1/2 cup Vegetable Oil
2 Eggs
1 teaspoon Vanilla
1/2 cup Raisins
1/2 cup finely chopped Walnuts
1 (21 ounces) can Apple-Pie Filling
2 cups All-Purpose Flour
1 teaspoon Baking Soda
1 teaspoon Baking Powder
1 teaspoon Cinnamon
1 teaspoon Salt

Topping:
3 tablespoons Granulated Sugar
1/2 cup Brown Sugar
1/4 cup Butter
3 tablespoons Flour
 
Preparation:

1. In large bowl combine sugar, oil, eggs and vanilla.

2. Mix in apple pie filling, walnuts and raisins.

3. In separate bowl mix flour, baking powder, baking soda, cinnamon and salt.

4. Mix into apple mixture.

5. Fill greased muffin tins 1/2 full and top with combined topping ingredients.

6. Bake at 350 for 20 minutes.

Better results will be achieved if you sift the flour before measuring; even when using pre-sifted flour.

When placing batter into muffin tins, scoop batter with a large spoon and push it off the spoon into the muffin cup or cupcake liner with another spoon.
