Applesauce Oat Bran Muffins

Dry mixture of oat bran, brown sugar, wheat flour, baking powder, cinnamon, nutmeg, and salt combined with egg whites, unsweetened applesauce, vegetable oil, vanilla extract and chopped nuts to create muffin batter. Muffin cups filled and baked in hot oven until golden.

Ingredients -
2-1/2 cup Oat Bran
1/2 cup packed Brown Sugar
1/4 cup whole Wheat Flour
2 teaspoons Baking Powder
1 teaspoon Cinnamon
1/2 teaspoon Nutmeg
1/4 teaspoon Salt
2 Egg Whites
1 1/2 cup Unsweetened Applesauce
2 tablespoons Salad Oil
1 teaspoon Vanilla
Walnuts or Pecans
 
Preparation:

1. In large bowl mix together all dry ingredients. Set aside.

2. In smaller bowl combine remaining ingredients until well blended.

3. Add all at once to dry ingredients.

4. Add nuts as desired. Stir just until moistened.

5. Fill muffin cups 2/3 full.

6. Bake at 400 degrees for 17 minutes.

Stirring Muffin Batter

Only stir muffin batter until dry ingredients are moistened. Muffin batter should be lumpy. Smooth batter results in tough muffins.

Filling Muffin Cups

Unless otherwise specified in the recipe, fill jumbo or regular muffin cups two-thirds to the top and mini muffin cups slightly higher. If you desire muffins with mushroom like caps, fill cups almost to the top, being sure to spray the top with cooking spray or greasing it very lightly with butter or vegetable oil so the muffin will not stick.
