Apricot Grape Nuts Muffins

Grape nuts cereal and chopped dried apricots softened in boiling water. Muffin batter created from all-purpose flour, baking powder, salt, sugar, chopped nuts, milk oil, egg, and apricot mixture. Batter spooned into individual muffin cups and baked in hot oven until firm and golden brown.

Ingredients -
1 cup Grape Nuts Cereal
1/2 cup finely chopped Dried Apricots
1/2 cup Boiling Water
1- 3/4 cups All-Purpose Flour
1 tablespoon Baking Powder
1/2 teaspoon Salt
1/2 cup Brown Sugar
1/2 cup chopped Nuts
2/3 cup Whole Milk
1/2 cup Vegetable Oil
1 Egg, beaten
 
Preparation:

1. Preheat the oven to 375 degrees F.

2. Grease 12 muffin cups or line with paper.

3. In a small mixing bowl, combine cereal, apricots and water. Set aside.

4. Sift flour, baking powder and salt into a large mixing bowl, and then add brown sugar and nuts. Set aside.

5. In a third bowl, combine milk, oil and egg.

6. Add to cereal mixture and mix well. Add this mixture to dry ingredients and stir until just moistened.

7. Spoon muffin batter into prepared muffin cups.

8. Bake for 20 to 25 minutes or until a tester inserted in the center comes out clean.

Dust nuts and fruit with flour before adding to batter to keep nuts and fruit pieces from sinking in the batter while baking.

It is imperative that you preheat the oven before mixing your muffin batter. Once the baking agents have been activated the muffin batter needs to be quickly distributed to the muffin cups and the muffin tin placed in the oven for baking.
