Banana Ginger Muffins

Vegetable oil, molasses, egg and mashed banana combined with dry mixture of flour, sugar, wheat germ, baking powder, salt, baking soda, ground ginger, allspice, and ground cinnamon to create muffin batter. Spooned evenly into muffin cups and baked until golden brown and firm to the touch.

Ingredients -
Mix together:
1/3 cup Cooking Oil
1/4 cup Molasses
1 Egg
1 cup mashed Bananas

Dry Ingredients:
1-1/4 cup White Flour
1/2 cup Whole Wheat Flour
1/4 cup Sugar
1/4 cup Wheat Germ
2-1/2 teaspoons Baking Powder
1/2 teaspoon Salt
1/4 teaspoon Baking Soda
1 teaspoon Ginger
1/4 teaspoon Allspice
1/4 teaspoon Cinnamon
 
Preparation:

1. Preheat oven to 375 degrees.

2. Grease two muffin pans and dust each with flour.

3. Sift dry ingredients together and place in large bowl.

4. Add other ingredients and mix well.

5. Pour into prepared muffin pans.

6. Bake 15-20 minutes until toothpick comes out clean.

Water in Empty Muffin Cups

Pour a small amount of water in empty muffin cups to keep the pan from warping when you are not using all muffin cups during baking.

Removing Muffins from the Oven

Once muffins are finished baking remove the muffin tin and place it on a wire rack for cooling. Cool 5 minutes before attempting to remove muffins from pans, unless the pans have been lined with cupcake papers. Chocolate and other muffins with soft fillers may require more time to firm up before being removed.
