Banana Praline Muffins

Muffin batter prepared from mashed banana, egg, sugar, oil and pancake mix. Batter is spooned into muffin cups and topped with pecan, sour cream and brown sugar mixture. Muffins are baked until golden brown.

Ingredients -
3 tablespoons Brown Sugar
1 tablespoon Sour Cream
1/3 cup chopped Pecans
3 small ripe Bananas
1 Egg, slightly beaten
1/2 cup Sugar
1/4 cup Oil
1-1/2 cups Pancake Mix
 
Preparation:

1. Preheat oven to 400 degrees.

2. Lightly grease two muffin tins and dust with flour.

3. In a small bowl combine the brown sugar and sour cream; stir in the pecans and set aside.

4. Mash bananas. Combine the egg, sugar, oil and mashed bananas, stirring until blended.

5. Add the pancake mix and stir until moistened. Fill each muffin cup 2/3 full.

6. Top each muffin with 1 teaspoon of the pecan mixture. Bake for 10-15 minutes.

Bake Muffins in Center of Oven

Muffins bake up and brown more evenly when placed on the middle rack of the oven during baking. Always preheat the oven for best results.

Storing Muffins

Store baked muffins in a cool dry location in airtight containers for 3 to 4 days. If they will not be eaten quickly after baking consider freezing. Place baked muffins in resealable bags and place in the freezer for up to 3 months.
