Banana Split Muffins

Mixture of frosted flakes cereal, all-purpose flour, baking powder, salt, cinnamon and nutmeg combined with egg, skim milk, vegetable oil, banana, cherries, and chopped nuts to create batter. Muffin tin is lined with cupcake papers, filled with batter, and baked until muffins are golden brown.

Ingredients -
2 cup Frosted Flakes cereal, slightly crushed
1-1/4 cup Flour
1 tablespoon Baking Powder
1/2 teaspoon Salt
1/2 teaspoon Cinnamon
1/4 teaspoon Nutmeg
1 Egg
1/3 cup Skim Milk
1/3 cup Vegetable Oil
2 medium ripe Bananas, mashed
1/4 cup chopped Maraschino Cherries, drained
1/4 cup chopped Nuts
 
Preparation:

1. Preheat oven to 400 F.

2. Stir together cereal, flour, baking powder, salt and spices. Set aside.

3. In large mixing bowl, combine egg, milk and oil. Stir in bananas, cherries and nuts.

4. Add cereal mixture, stirring only until combined.

5. Spoon evenly into twelve 2-1/2 inch muffin pan cups coated with cooking spray (or use cupcake liners).

6. Bake 20 minutes or until golden brown. Serve warm.

Doneness

Insert a toothpick into the center of the muffins to test for doneness. The muffins are done if the toothpick comes out clean.

Thawing Frozen Muffins

Place frozen muffins in the microwave for 25-30 seconds, or allow them to thaw at room temperature for about 30 minutes.
