Bran Muffins

   
  Ingredients -
   
  2 1/4 cups Whole Bran
1 cup Buttermilk
1/3 cup Molasses
1/4 cup firmly packed Brown Sugar
1 cup sifted All-Purpose Flour
1 teaspoon Baking Powder
1 teaspoon Baking Soda
1 teaspoon Salt
1 Egg, slightly beaten
1/4 cup Vegetable Shortening, melted
   
  Preparation:
   
 

Preheat oven to 400 degrees F. Mix bran, buttermilk, molasses and brown sugar in a small bowl. Let stand until liquid is absorbed. In a large bowl, mix flour, baking power, baking soda and salt. Stir egg and melted shortening into bran mixture. Add this mixture to flour mixture and stir lightly with a fork just until evenly moist. Spoon into greased muffin tin cups, filling each 2/3 full. Bake for 20 minutes or until richly golden. Serve hot. Makes 12 muffins.
