Butter Pecan Muffins

Delicious muffins prepared from self-rising flour, chopped pecans, brown sugar, egg, milk, butter and vanilla extract. Mixture is spooned into prepared muffin tin and baked until firm to the touch and golden brown.

Ingredients -
1-1/2 cups Self-Rising Flour
1 cup chopped Pecans
1/2 cup Brown Sugar
1 Egg
3/4 cup Milk
1/4 cup Butter or Margarine, melted
1 teaspoon Vanilla
 
Preparation:

1. Preheat oven to 400 F.

2. Combine flour, pecans and brown sugar in a mixing bowl and set aside.

3. Mix together egg, milk, butter and vanilla; add all at once to flour mixture.

4. Stir only until dry ingredients are moistened.

5. Spoon the batter into greased muffin pan, filling 2/3 full.

6. Bake at 400 F for 15 minutes or until golden brown.

Muffin Making Tips -
Mixing Batter

Batter should not be over mixed. Dry ingredients should be moistened and in most cases the batter should still be lumpy. Lumps dissolve during baking. Over mixed batter will result in tough muffins when baked.
