Chocolate Sour Cream Muffins

Melted butter and chocolate combined with sour cream, brown sugar, corn syrup, egg, and vanilla extract. Mixture blended with all-purpose flour, baking soda, salt and chocolate chips to create muffin batter. Spooned into prepared muffin tin and baked until firm.

Ingredients -
5 ounces Semi-Sweet Chocolate
2 squares of Baking Chocolate
1/3 cup Butter
3/4 cup Sour Cream
2/3 cup Brown Sugar, packed
1/4 cup Corn Syrup
1 Egg
1 teaspoon Vanilla Extract
1-1/2 cups All-Purpose Flour
1 teaspoon Baking Soda
1/4 teaspoon Salt
1/2 cup Chocolate Chips
 
Preparation:

1. Preheat oven to 400 F.

2. Melt semi-sweet chocolate, baking chocolate and butter together in microwave or double boiler.

3. Cool to lukewarm, and then mix with sour cream, brown sugar, corn syrup, egg and vanilla.

4. Blend flour, soda and salt together in a large bowl, then add chocolate mixture and blend well again.

5. Add chocolate chips.

6. Pour batter into greased or paper-lined muffin tin, makes 12, and bake in preheated oven for 20 minutes.

7. Remove from muffin tin and cool on wire racks.
