Corn Muffins

Simple and delicious muffins prepared from flour, cornmeal, sugar, baking soda, salt, egg, and sour cream.

Ingredients -
1/2 cup Flour
1/2 cup Cornmeal
3 tablespoons Sugar
1/2 teaspoon Baking Soda
1/2 teaspoon Salt
1 Egg
1 cup (8 ounces) Sour Cream
 
Preparation:

1. Preheat oven to 400 F.

2. Grease muffin cups.

3. In a large bowl, combine the flour, cornmeal, sugar, baking soda, and salt.

4. In another bowl, beat the egg and sour cream. Stir into dry ingredients just until moistened.

5. Fill eight of the greased muffin cups two-thirds full.

6. Bake for 15-18 minutes or until a toothpick inserted into the center comes out clean.

7. Cool for 5 minutes before removing from baking pan to a wire rack to cool completely.
