Fresh Blackberry Muffins

Sugar, butter, and eggs are creamed. The creamy mixture is added to flour, baking powder, milk and salt to create batter. Blackberries gently folded in and batter is spread evenly between muffin cups. Muffins baked until tops are round and golden brown.

Ingredients -
1 stick Unsalted Butter, softened
1-1/4 cups Sugar
2 Large Eggs at room temperature
2 cups Flour
2 teaspoons Baking Powder
1/2-teaspoon Salt
1/2 cup Milk
2 cups Fresh Blackberries
4 teaspoons Sugar
 
Preparation:

1. Preheat oven to 375 F.

2. Grease 18 muffin cups.

3. Using an electric mixer beat the butter and sugar until creamy. Add eggs and beat well.

4. Sift flour, baking powder and salt into small bowl.

5. Mix dry ingredients into butter mixture alternately with milk. Fold in berries.

6. Pour into muffin cups and bake for 25 minutes.

Muffin Making Tips -
Stirring by Hand

Unless specified, muffin batter should be stirred by hand. Most recipes will not require much in the way of combining ingredients past just moistening the dry ingredients. Batter is better when lumpy. Too much mixing will produce muffins with a tough texture.

Dried and Candied Fruit

Dried and candied fruit including, blueberries, cranberries, sour cherries, apples, and apricots are great additions to batter. The addition of the candied fruit should not have any significant impact on the consistency of the batter or the final baked good product.
