Lemon Herb Muffins

Eggs, baking mix, sugar, fresh lemon zest, fresh lemon juice, water, vegetable oil, and dried herbs combined to create batter for lemon muffins. Batter is spooned into prepared pan, and topped with sugar crystals before being baked.

Ingredients -
2 Eggs
2 cups Original Bisquick® Mix
1/3 cup Sugar
1 teaspoon grated Lemon Peel
1/4 cup Fresh Lemon Juice
1/4 cup Water
2 tablespoons Vegetable Oil
1/2 teaspoon Dried Rosemary or Basil Leaves, crumbled
1/4 cup White Coarse Sugar Crystals, if desired
 
Preparation:

1. Preheat oven to 400 F.

2. Place paper baking cup in each of 12 regular-size muffin cups, or grease bottoms only of muffin cups.

3. Beat eggs slightly in medium bowl; stir in remaining ingredients except sugar crystals just until moistened.

4. Divide batter evenly among cups; sprinkle with sugar crystals.

5. Bake 15 to 20 minutes or until tops are golden brown.

Mini Muffin Baking Time

Mini muffins require less time to bake then regular muffins, as much as ten to fifteen minutes less so watch them carefully and check initially for doneness after 12-15 minutes.

Fresh Lemon Juice

It is not advisable to substitute processed juice for fresh; however it is a good idea to taste the fresh lemon juice to make sure the lemon juice is indeed fresh and not too bitter.
