Pecan Sticky Muffins

Mixture of pecans, melted butter and brown sugar spooned into individual muffin cups and topped with vanilla and cinnamon flavored muffin batter. Sticky muffins are baked until golden brown, and cooled before serving.

Ingredients -
2 cups All-Purpose Flour
1 tablespoon Baking Powder
1 teaspoon Cinnamon
1/4 teaspoon Salt
2 Eggs
1 cup Milk
1/4 cup Vegetable Oil
1/2 cup packed Brown Sugar
1 teaspoon Vanilla Extract

Topping:
1/4 cup Butter, melted
1/4 cup packed Brown Sugar
1 cup chopped Pecans
 
Preparation:

1. Preheat oven to 350 F.

2. Combine flour, baking powder, cinnamon and salt.

3. In another bowl, beat the eggs, milk, oil, sugar and vanilla until smooth.

4. Stir into dry ingredients just until moistened.

5. Into each greased muffin cup, spoon 1 teaspoon butter, 1 teaspoon brown sugar and 1 heaping tablespoon of pecans. Top each with 1/4 cup batter.

6. Bake for 25 to 30 minutes or until muffins test done.

7. Invert pan onto a piece of foil. Let stand for 2 minutes, remove pan.

Tasty Toppings

Sprinkle chopped or crushed nuts over the tops of unbaked muffins before baking to add a special treat and taste to muffins. The nuts will brown during baking adding extra flavor.

Excess Baking Powder

Excess baking powder can make muffins bitter. As a guide, use 2-1/2 teaspoons double acting baking powder, or 4 teaspoons fast acting baking powder for leavening 2 cups of flour in a recipe.
