Poppy Cheddar Muffins

Muffins prepared from all-purpose flour, white sugar, baking powder, poppy seeds, salt, egg, whole milk, vegetable oil, and fresh shredded cheddar cheese.

Ingredients -
1-3/4 cups All-Purpose Flour
2 tablespoons Sugar
2-1/2 teaspoons Baking Powder
2 teaspoons Poppy Seeds
3/4 teaspoon Salt
1 Egg
3/4 cup Milk
1/3 cup Vegetable Oil
1 cup shredded Cheddar Cheese
 
Preparation:

1. Preheat oven to 400 F.

2. In a bowl, combine flour, sugar, baking powder, poppy seeds and salt.

3. Combine egg, milk and oil; mix well. Stir into dry ingredients just until moistened.

4. Fold in cheese. Fill greased or paper-lined muffin cups two-thirds full.

5. Bake in preheated oven for 25 minutes or until muffins test done.

Muffin Making Tips -
Sifter

A sifter is usually not required for making muffins but can be used to add extra air into flour. A sifter can also be useful for dusting powdered sugar or cocoa over freshly baked muffins.

Oil Instead of Butter

Vegetable oil can be used in place of butter in muffin recipes. In place of the butter, add one-fourth the oil and three-fourths with fruit purée. Or swap out the butter with slightly less oil (80-90%) and add 1 teaspoon milk.
