Strawberry Yogurt Muffins

Muffins feature the delicious flavors of strawberry yogurt, fresh strawberries, fresh lemon zest, and pecans.

Ingredients -
1 cup All-Purpose Flour
2 tablespoons All-Purpose Flour
1/4 teaspoon Baking Soda
1-1/4 teaspoons Baking Powder
1/4 teaspoon Salt
1/2 cup Granulated Sugar
1 Egg or Egg Substitute
2 tablespoons Butter or Margarine, melted
1 cup Strawberry Yogurt or Plain Yogurt
1 cup Strawberries, diced small
1 teaspoon Lemon Rind, grated
1/2 cup Pecans, chopped
 
Preparation:

1. In medium bowl, stir together all flour, baking soda, baking powder, salt and sugar.

2. In small bowl, beat together egg, melted butter and yogurt.

3. Gently fold yogurt mixture into flour mixture until completely incorporated. Do NOT beat.

4. Fold in strawberries, lemon rind and pecans.

5. Spoon the batter into 9 well-greased muffin cups. Chill in refrigerator 1 hour.

6. Preheat oven to 400 F.

7. Bake muffins in preheated oven for 25-30 min until they puff up and are golden brown. Remove from oven.

8. Let muffins stand 5 min, and then turn out of pan.

Remove muffin pans from the hot oven to a wire rack. A wire rack allows air to circulate underneath the muffin pan immediately after baking; stopping the baking process and preventing them from getting soggy.
