Sweet Potato Muffins

   
  Ingredients -
   
  1 cup Butter, softened
1 cup Sugar
6 Eggs
1 teaspoon Vanilla
2 cups Buttermilk
1 1/2 cups Flour
2 tablespoons Baking Powder
1 pound Sweet Potatoes (peeled, cooked and mashed or use canned)
   
  Preparation:
   
 

Blend butter and sugar together. Add eggs, vanilla, buttermilk, flour, baking powder and sweet potatoes. Mix thoroughly. Pour batter into greased muffin tins, about two-thirds full, and bake at 350 degrees F. for 20 to 30 minutes. Cool on wire rack.
